INGREDIENTS:
1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1 can (410g) diced tomatoes, drained or two large tomatoes
120ml Soweto Chilli Lime Sauce
1 teaspoon chilli powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
4 corn tortillas
4 large eggs
1/4 cup shredded cheddar cheese
Fresh cilantro leaves, chopped
Lime wedges
INSTRUCTIONS:
- Heat up a large skillet with olive oil over medium heat.
- Add the chopped onion and minced garlic and sauté until the onion is cooked and fragrant, about 5 minutes.
- Stir in the diced tomatoes, Soweto Chilli Lime sauce, chilli powder, cumin, and salt. Let it simmer for 5 minutes.
- Arrange the tortillas on top of the tomato mixture in the skillet.
- Crack an egg into each tortilla. Cover the skillet and let it cook until the eggs are set about 5-7 minutes.
- Sprinkle the shredded cheddar cheese over the eggs and cover again until the cheese is melted, about 1-2 minutes.
- Garnish with chopped cilantro and serve with lime wedges on the side.
